I still love fish sticks or fingers as some call them. HA! Most are made from fish from China, so I stay away from them, but this week I found some made from haddock from Canada and they are so good I got 2 boxes of them . I love to eat them with a plate of baked beans, a New England fave. Yumm!!

Some awesome fresh bread from a Polish bakery I found while driving yesterday. I dip it in a little EVOO. WOW that's good.

Me and my mom were eating chicken and rice everyday single day for 2 months! I always like to add milk to it because I don't like it too thick. I also can last on cold pasta for a really long time too. Another thing is, is that I'm crazy about soups and sandwhiches. My favorite meal EVER!

Strange, as I am cooking my fave meal of chicken and rice now. I made this very often when my kids were young. They are both grown now and it's one of their faves also.

I actually don't make any of it, my mom makes it. But she always buys white rice and flavors it with Culantro y Achiote seasoning that comes in packets. It turns the rice into this orange color. She puts a large piece of chicken in a pan, warms it up for about half an hour, maybe more while cooking the rice. She cuts tomatoes and peppers and mixes that in the rice and then when the chicken's finished she cuts it up and adds it to the mix. I always add milk to it when I put it in my bowl but she doesn't. It's really good.

Another thing she makes are quesadillas. Gosh I can live on those. With these she cooks tortillas in a sprayed pan with butter till it's crisp but before she does that she puts tomatoes, chicken, and cheese in it so it can cook with the tortilla. I've made this a few times myself as well. Those take about 10 minutes to make.

I use a spice mix made by GOYA called Sazon, con Azafran. Great taste and it turns my rice a nice orange color. I used it for years. I boil my chicken with this spice mix, celery, onions and pepers, some hot, sometimes I add corn. Cook till chicken is tender and debone, add rice and cook covered till rice is done, then add the cut-up chicken and eat with crusty bread. One of my fave comfort foods.

thanks my friend, I'm just a good cook for my tastes. I have lived alone for some time now and cook most of my meals. I eat out rarely, when I drive, I'll get a fast bite somewhere like one pizza slice and I'll bring some celery sticks to munch on. My chicken and rice was so good I had two bowls for lunch and more just now and still have some left for Monday's lunch. I like this so much, I plan on making more later in the week.
